There are basically three fundamental steps to whiskey making:
1. Mashing;
2. Fermenting;
3. Distilling.
Mashing
Mashing is the process where grain starch is converted into fermentable sugars. It is done by putting the cracked grains with warm water and certain amounts of enzymes in a vessel. Mixing the concoction and carefully managing the temperature are critical. Since mashing takes 4 to 6 hours, you need but one masher.
Fermenting
Fermenting is the process where grain sugars are converted into alcohol and flavor molecules. It is done by adding yeast to the mash, and by carefully managing temperature and pH. The process takes about 4 to 5 days, so traditionally you need 5 or 6 fermenters.
Distilling
Distillation concentrates and selects the alcohol and flavors. Usually a double distillation cycle is needed. Since distilling takes about an 8 hour shift, traditionally two stills are needed. One for the first stripping run, another one for the second finishing run

How does the distillation plant work?
Before distillation, it must be confirmed that the steam, electricity, and cooling water are all connected, and the distiller is in a state of being cleaned and ready for use. In the pot, the pot body starts to be heated by steam (or electric heating rod). When the temperature of the pot body reaches 70 degrees, the water inlet valve of the condenser needs to be slowly opened for cooling. As the temperature inside the pot rises, the mouth of the wine starts to come out. It is usually called the head of the wine at the beginning. We usually pinch off the head of the wine. As the wine core flows out, this is the part we need. It is the tail that flows out until the end of the distillation. (Note: wine head] wine core and wine tail are collected separately, wine head and wine tail generally enter the pot with the next pot of fermentation liquid for re-distillation) When the distillation is over, you need to close the main steam valve until the wine is out When the mouth is out of wine, the cooling water main valve is closed, and finally the residual liquid in the distillation pot is patted, and then the equipment is cleaned and left for later use. Finally when everything is done, turn off the power.
How to clean distillation equipment?
For the stills made of red copper, we recommend using citric acid (concentration 2~3%) to heat it to 60-70 degrees Celsius for 20-30 minutes of cycle cleaning, then pat it off, and finally use hot water to cycle for 15 minutes to complete the cleaning.
