Classification of tower distiller:
(1) Heating method - mainly electric heating or steam heating. Column stills are heated at the bottom, usually by injection of steam, or through a heat exchanger driven by steam, called a "reboiler".
(2) Ways to promote backflow - three ways. One, some stills are equipped with overhead condensers. Second, in some stills, the alcohol solution will pass through the pipes between the rectifying plates to achieve the effect of preheating. Third, some distillers will pour the spirits they have already obtained back into their stills to promote reflux.
(3) Separator and Rectifier - Continuous distillation consists of two stages similar to batch distillation. First, the volatile fraction is separated from most of the water and non-volatiles. The volatile fraction is then rectified. Typically, each stage is carried out in their respective towers. The first stage takes place in a column called a "separator" and the second stage is called a "rectifier". This can also be done in a huge single column, just imagine a rectifier placed above a separator.
Components:
The Still comes with one Copper Head on the Boiler,
4 Bubble Plate Whiskey Column and one 16 Bubble Plate Vodka Column.
The individual Plate Drain Valves in the 4 Plate Copper Whiskey and the 16 Plate Vodka Column can be opened or closed allowing for better control of flavor profiles and proof.
The Dephlegmators at the top of the Whiskey Column and Vodka Column are used to control proof.
The Vodka Column has 16 bubble plates and a Dephlegmator in the top.
With the Vodka Column on line this still will produce 190 proof Vodka in one run.
For best results a stripping run should be done using only the Scotch Column.
Then the Vodka Run should be done with the low wines from the stripping run.
The 4 plate Whiskey Column will produce up to 160 proof in one run.
If you want to do a stripping run, you bypass the Whiskey Column and the Vodka Column with the two bypass valves, or if you are doing a Vodka, you simply run the vapor through all three columns.


4. Vodka Classifiation:
Vodkas are mostly distilled from grains such as sorghum, corn, rye or wheat, and are made through mashing - fermentation - distillation - filtration - dilution - blending.
The main distiller is responsible for distilling the vodka and directing its filtration, which includes removing the fore spray, heads, and tails. These components of the distillate contain flavor compounds such as ethyl acetate and ethyl lactate as well as impurities that affect the often desired clean taste of vodka. Through multiple rounds of distillation, or using fractional distillation, the flavor is altered and clarity is added.
Vodka uses a continuous still, which is also called a tower still. The definition of a tower still is very simple. . Their outer structure is mainly cylindrical in shape.
