When you think of distillation, you probably think of old-fashioned copper distillery equipment. If you’re distilling alcohol, your wash will contain some nasty sulfur compounds that form during fermentation. You need copper to help neutralize these sulfur compounds and improve the taste and smell of the final product, so copper is the material of choice in any moonshine distillery equipment. Copper has other benefits as well. Copper conducts heat better than stainless steel, which saves time on initial heating, but it also means increased heat loss as well. Copper is easier to build for a novice as it is a much softer metal than stainless steel and is more readily available.

A pot still is simply a boiling pot, a lye arm, (exit pipe) and a condenser. The length and angle of the lye arm influences the reflux (condensation and potential re-evaporation) and so the purity of the spirit. Usually it's necessary to pass a spirit multiple times through a pot still to gain purity.
