3.Brandy Knowledge:
1. Brandy is a kind of distilled liquor, which is made from fruit through fermentation, distillation and storage. Brandy can be divided into two categories: fruit brandy (such as apple brandy) and grape brandy, and the latter has the largest number and is often directly called brandy.
2. In brandy, there are mainly two categories of brandy (distilled with wine) and skin-dregs brandy. The grape varieties used for the production of brandy are mainly neutral (almost no aroma) varieties, and the original grape wine is preferably white, with low alcohol content and high acidity, and has not been treated with sulfur dioxide.
3. The grape varieties used to produce pomace are mainly aromatic varieties. Brandy distillation methods are mainly discontinuous pot distillation and continuous tower distillation.
4. However, no matter what method is used, the alcohol content of the distillate should be less than 86% (V/V), the total amount of volatile matter should be greater than 2g/L (pure alcohol), and the methanol content should be less than 00g/L (pure alcohol). ).

7. The alcohol content of the finished brandy is generally 40-43% (V/V). Therefore, in most cases, the brandy should be blended before bottling to reduce the alcohol content and adjust other ingredients.
